Cow from mail and is the docker mascot. It represents mail(): dockerized. Has been there since the project was converted from a conventional setup to dockerized. Man I feel old already 
I love it! 
It’s great how mailcow are just leaning into the cuteness of the and logos. They also say “Moohoo” as greeting. Saw that in a post this week on their blog - I guess DerLinkman (also a cute name) was a formative figure in Mailcow but has now left the project.
Niklas (aka DerLinkman) isn’t the first to exit, the original creator andré (andryyy (André) · GitHub) also left mailcow project a few years ago due to various constraints and handed it over to the good folks at TinC (The Infrastructure Company) who have adopted the project and made great additions to it over time. Yes, it has gone a bit corporate over time but no complaints if it means a stable, more production ready suite.
